Saffron

The saffron we grow is much more than a simple spice. It's an experience born of a profound passion, expressed in every pistil, in every step of the cultivation, harvesting, and processing process. Our saffron is pure, precious, and authentic. Each pistil is the fruit of slow, patient, and disciplined labor that requires the utmost respect for the land and time. A labor that accepts no shortcuts, but is nourished by passion, daily commitment, and a deep connection with our environment. It's the beauty of an agricultural art that goes beyond mere production, but seeks to reveal perfection in every single gesture, every small stage of processing.
Our saffron grove sits atop a hill, covering approximately 1,500 acres, in the heart of Monferrato, surrounded by fruit trees, acacias, walnuts, and cherry trees. This breathtaking landscape, changing with the seasons, is our workplace, but also our inspiration. Every day, during the harvest, walking among the rows of saffron, we can admire the sunrise painting the sky with golden hues, while the morning mists envelop the valley below. It's a magical moment, marking the beginning of a new working day, always on tiptoe, with the utmost respect for nature. The silence of dawn, the twilight fading into the softest colors, the fresh, crisp air are our ideal habitat for hand-picking saffron flowers, with delicacy and precision. Each flower is fragile, each pistil must be treated like a rare gem, and this awareness guides us in every move, every gesture.
Saffron, an ancient and fascinating spice, has always been synonymous with refinement, exclusivity, and quality. But behind this excellence lies a labor that is not just hard work, but discipline and dedication. Every stage of cultivation requires attention to detail, constant care, and a perfect balance between tradition and innovation. We cannot afford to be hasty or imprecise, because saffron does not allow for any error. Every pistil, from sowing to harvest, requires our total dedication. Each flower is the fruit of a natural cycle that must be respected, observed, and protected.
After harvesting, the pistils are dried the same day, in a slow and controlled process that preserves the aroma, color, and quality of the spice. Our processing laboratory is the heart of the process, where each pistil is treated with the utmost care, without the use of chemicals, only manual processing. Every year, to ensure quality, we subject our harvests to rigorous controls, with chemical analyses certified by UNIMONT, which test the purity and aromatic potency of our saffron. This places it in the highest category. Quality is at the heart of everything, and is certified by analyses that verify the concentration of crocin, picrocrocin, and safranal, ensuring that our final product is always perfect and ready to satisfy even the most refined palates.
Our cultivation is rooted in respect and care for the environment, where every choice is designed to preserve biodiversity and soil health. Our saffron field is located in an ecosystem that includes fruit trees, acacias, and other trees of high ecological value, creating a synergy that enriches the soil and promotes biodiversity. The soil is not just where we grow, but an integral part of our agricultural process. Every decision we make, from planting the bulbs to caring for the soil, is aimed at maintaining a natural balance that allows us to produce a product of the highest quality, without compromising the health of the soil, the ecosystem, and the surrounding environment.
Every saffron thread we harvest is a fragment of time and labor, a testament to our dedication to the land and to quality. It's not just a culinary ingredient, but a tangible sign of a labor that combines passion and respect for nature. The saffron we produce is pure, authentic, a true golden treasure that we proudly bring to our customers' tables. Our commitment is to offer a product that embodies quality, purity, and sustainability, and that conveys our passion for agriculture, nature, and the beauty of our land.
